“I think when people arrive in Boise, they get a taste of what Boise really is with local concepts,” says Hector Garcia, owner of Waffle Me Up. Waffle Me Up is one of Boise’s new local businesses that will soon be serving travelers at the airport.

“It’s a beautiful stand, it will be right in the middle, between Bardenay’s and Einstein,” says Garcia. His stand will be partnered with The STIL to offer waffles and chicken as well as ice cream and a selection of beer and wine. “If you have a good product and it is locally made and fresh and 100% genuine, then it brings people joy and happiness,” he added.

“I love the Boise airport. “I’ve probably flown to hundreds of different airports and Boise Airport is by far my favorite,” says Logan Flake. Flake lives in New York City but grew up in Idaho and often visits family in the area. He typically avoids spending money at chain restaurants in airports, but likes to support local cuisine.

“There’s a lot of consolidation in the world these days, with big brands buying everything, crowding out the little guys. I think it’s really important to give the little guys the upper hand whenever you can,” Flake added.

Wednesday’s event gave passengers a taste of BOI’s new offerings.

The expansion will offer a variety of new options for local retailers, food, beverage and coffee, including many local brands such as Treefort, Flying M Coffee and Capital City Public Market.

“The Boise Airport is the first and last place visitors see when they travel. “And it’s also a starting point for the people who live here, and it’s important that we provide wonderful amenities for people to enjoy and showcase our city and the best of Boise,” says Rebecca Hupp, the director of the Boise Airport.
