Every fall, thoughts of gingerbread fill my mind. During the holidays, I try to track down my mom’s favorite gingerbread tiles from Rustic Bakery before they sell out, buy kits so my girls can build and decorate gingerbread houses (so fun!), bake my own gingerbread cake, and sample the latest gingerbread treats .

Why I love Trader Joe’s Gingerbread Sandwich Cookies

My favorite entry in this category this year is the box of gingerbread sandwich cookies from Trader Joe’s. Firstly, the rustic-chic packaging is aesthetically pleasing – they make great hostess gifts at any holiday party. Second, the cookies themselves are adorable, two fluffy little sugar-dusted circles enclosing a generously thick filling of cream cheese frosting.

And thirdly, they are delicious! Compared to cookies, they’re on the soft and delicate side, and I would describe the gingerbread flavor as mild – you don’t get as much ginger as TJ’s Triple Ginger Snaps – but the spices are there. It is a pleasant, mild blend of cinnamon, ginger and nutmeg. They’re definitely a little sweeter with coarse sugar on top and vanilla frosting in the middle. My youngest likes them with a glass of milk, and I like them best with a cup of coffee or black tea to tone down the sweetness. Rooibos tea would also go well with it.

Trader Joe’s Gingerbread Sandwich Cookies

  • Price: $5.99 for 18 sandwich cookies

  • Why I love her: These subtly spiced, soft gingerbread cookies are delicious and beautiful enough to give as a hostess gift. That is, if your family doesn’t eat them all first.

The cookies are $5.99 for a 20-ounce package of 18 cookies. I think this is a great deal for a dessert that is so cute and presentable! They are small but filling – one is enough for a filling treat.

My mom hasn’t tried these yet, and since she’s the gingerbread lover in my family, I’m excited to see what she thinks! I suspect she might find them a bit mild for her taste, but if you like your gingerbreads subtly spiced, these are for you. They are definitely a hit in my house. We always give our kids a little treat after dinner if they want, and this week they have been asking for these cookies almost every night.

These are small enough that you can add them to a bowl of ice cream as a fun little accompaniment. I think this would be a great, no-fuss Christmas dessert – imagine a small bowl of pumpkin cheesecake ice cream with a sandwich cookie inside, all drizzled with a little sea salt caramel sauce. Yes, please.
